3 lbs Idaho or Yukon Gold
1 sweet onion, sliced thinly
1 tsp salt
1 tsp pepper
2 C cheese, shredded
5 T butter
2-3 C half & half
2 garlic cloves, minced
1 sprig thyme, optional
1/8 tsp fresh grated nutmeg

Directions:
Preheat oven to 425 degrees. Butter a 9x13"" inch baking dish. Slice potatoes 1/8 inch thick. Make three layers of potatoes, onions, and cheeses in buttered dish. Sprinkle each layer with salt and pepper and dot with butter ending with a layer of cheese on top. Heat milk, nutmeg, thyme and garlic in saucepan to almost boiling point and carefully pour over potatoes (remove thyme before pouring over potatoes.).

Bake covered for 25 minutes, uncover and bake approximately 20-25 minutes or until potatoes are tender. Garnish with parsley, chives or green onion tops.

Any cheese can be used:
Gruyere, Swiss, Cheddar, Pepper jack
