Stewed Potatoes Recipe

4-5 medium sized potatoes
2-3 T butter or bacon grease
1/4 C chopped onion
salt pepper
red pepper flakes

Directions:
Peel potatoes and slice potatoes very thin 1/4 inch). Place in heavy sauce pot. Add just enough water to barely cover the potatoes along with salt and pepper, red pepper flakes, butter or bacon grease. Bring to boil and lower heat to SIMMER and cook until soft with the lid half on. You want the potatoes to thicken up in the water.

The old timey country way is to fry a couple pieces of "fatback" until crisp and add the grease to the potatoes and then put the crispy "fatback" in at the very end. This is my favorite way because they are really seasoned.

We had potatoes almost every day and mostly cooked this way. This is another one of those dishes that are foreign to anyone but a country person OR a Southerner! Daddy calledl all potatoes "Irish" potatoes.
