4 medium oranges, cut in half
4 medium sweet potatoes
3 T butter, melted
1/4 C brown sugar
1/4 C Pet milk
1 tsp grated orange rind
1/4 tsp salt
1/4 tsp fresh grated nutmeg
2 T finely chopped pecans

Directions:
Directions:
Cut oranges in half crosswise. Carefully remove pulp. The skins are going to be the cup that holds the sweet potatoes.

Cook sweet potatoes in boiling water until tender or bake until tender. Let cool slightly or you will burn your hand! Scoop out potatoes into large bowl. Mash with butter and 2 T brown sugar, salt, orange rind and milk until smooth. Spoon into orange cups. Combine pecans and rest of brown sugar and sprinkle over potatoes. Place orange cups in an 13x9x2 inch baking dish.

Bake at 350 degrees for 25 to 30 minutes. Miniature marshmallows can be added to the top.
