1 (9 inch) pie crust
4 large meaty tomatoes, sliced 1/2 inch thick
10 fresh basil leaves, chopped
1/2 C green onions
1/2 tsp salt
1/2 tsp pepper
chopped jalapeņos, optional
TOPPING
1 C Mozzarella, grated
1/2 C Parmesan cheese, grated
1 C Cheddar cheese, grated
1 C Best Foods mayonnaise


Directions:

Brush pie shell with an egg wash and pre-bake pie shell for 7 minutes at 400 degrees.

Slice and seed tomatoes then sprinkle evenly with 1/2 tsp salt. Drain on paper towels for about 10 to 15 minutes.

Chop green onions, tops included. Turn oven down to 350 degrees. Spread a thin layer of topping in bottom of pie shell. Begin layering tomatoes, basil and onions in pie shell. Season with salt and pepper. Combine cheeses and mayonnaise together and spread over tomatoes.

Bake for 30 to 40 minutes. Serve warm.

May also be cooked in a tart pan.
Pepper jack cheese can be used.

I didn't even liked the name of this pie until I tried it one day. It says eat it warm but I can eat it cold too! Its delicious with garden fresh tomatoes.
