1 c. warm water
2 T. granulated sugar
1 t. active dry yeast
1/3 c. olive oil
1 T. Italian seasoning
2 t. garlic, minced
1 t. kosher salt
2 1/2 c. all purpose flour

Garlic Butter
1/2 stick unsalted butter, melted
2 T. parmesan cheese, grated
2 t. garlic, minced
1 t. fresh parsley, chopped
1/2 t. kosher salt

Toppings
1 1/2 c. mozzarella cheese, shredded and divided
1 c. cheddar cheese, shredded

In a large bowl combine water, sugar, and yeast. Stir and let rest 5 minutes. In a small bow combine olive oil, Italian seasoning, garlic and salt. Pour half of the oil mixture into the yeast mixture and set the remaining oil aside. Add flour to the yeast mixture. Stir to combine. Add dough to a greased bowl and cover. Let the dough rest for 1 hour or until the dough has doubled in size.

When ready, preheat the oven to 450. Pour the remaining oil mixture into a 12-inch cast-iron skillet. Use a pastry brush to coat the skillet. Add half of the dough to the skillet and work the dough to the edges. Use your fingers to create dimples in the dough. Top with 1 c. of shredded mozzarella cheese. Form the remaining dough into a 12-in circle on parchment paper. Invert the parchment over the cheese and carefully pull back the paper, leaving the dough on the top layer of the skillet.

In a small bowl mix together the butter, parmesan, garlic, parsley and salt. Use your fingers to gently dimple the top layer of dough and brush with the butter mixture. Top with remaining mozzarella and cheddar cheese. Bake for 23-25 minutes or until gold brown and the cheese is bubbling. Serve hot with marinara sauce for dipping.
