1 pie crust
6 eggs
1 1/2 c. Heavy cream
Salt
Pepper
5 oz.feta
2 c. Chopped baby spinach
Olive oil
Large clove of garlic, minced
7 cherry tomatoes, halved

Directions:
Directions:
Preheat oven to 375. Pierce pie crust with a fork and bake for 10 minutes. Cool while you prepare the other ingredients. Combine eggs, cream, salt and pepper in a blender or food processor and process on low until mixed. Heat olive oil in a small skillet. Add spinach and wilt. Add the garlic and cook for another minute. Crumble feta into the pie crust and top with spinach. Top with the egg and cream mixture. Add cherry tomatoes to the top cut side up. Bake at 375 for 45 minutes or until set.
