1 package active dry yeast
2 1/2 cups warm water
2 cups flour
1 Tbls sugar

Additional 2 cups each: flour, milk, sugar

Make the starter. Be sure to NEVER use a metal container or spoon!
Day 1: In a large plastic or glass bowl, dissolve yeast in 1/2 cup warm water. With a plastic or wooden spoon, stir in remaining water, flour and sugar. Beat until smooth. Cover and leave in a cool place. Do not refrigerate.
Days 2, 3, and 4: Stir batter once each day, cover and leave in a cool place.
Day 5: Add 1 cup each of flour, milk, and sugar. Stir, cover, and leave in a cool place.
Days 6, 7, 8, and 9: Stir batter once each day, cover, and leave in a cool place.
Day 10: Add 1 cup each of flour, milk, and sugar, then stir. Pour one cup batter into each of 3 containers, give 2 away to friends and keep one which becomes the new starter. Freeze or begin the 10 day process again starting the next day with instructions for Day 2.
Be sure to give the recipe for the starter and the bread to your friends along with the container of starter.
