3/4 cup evaporated milk
2 eggs room temp, lightly beaten
1/4 cup melted butter
1/2 cup sugar
2 cups flour unbleached best
1 tsp. salt
2 cups flour
3 tsp. cardamom powder
2 pkgs. yeast
pearl sugar

Add these ingredients in the following order to the bread machine pan: hot water, evap. milk, eggs, butter, sugar, 2 c flour, 1 tsp salt, 2nd 2 c flour, cardamom and yeast. Set for the dough cycle. On my machine (the Breadman) it's #9. It takes 90 minutes to mix, knead, and rise the dough.

Dust large bread board with flour. Remove dough from machine. Turn over a few times on board, cover with a towel and let rest 10 minutes.

Divide dough in half. Separate one half into 3 equal pieces. I weigh them so they are about 6 oz. each. Roll each piece between palms into a rope shape about 15 inches long. You may have to squeeze a little to stretch dough. Attach the 3 pieces at one end and seal with a little water. Braid the strands and seal at the other end. Place on parchment lined cookie sheet, cover with plastic wrap and towel and let rise in a warm place 60 - 80 minutes - to double its bulk. Do the same with the other half of dough.

When ready to bake, brush with egg wash. Sprinkle with pearl sugar and sliced almonds. Bake in preheated 375 degree oven for 20-25 minutes. Watch carefully and check at 20 minutes! Makes 2 good sized braids. When cool wrap in heavy duty foil. Freezes well. Serve warmed with butter and freshly brewed coffee!
Note: If you cannot buy Pearl Sugar, use regular granulated sugar.

I was thrilled to realize I could use my newly purchased Breadman bread machine (1990) to help in making this coffee bread! It was necessary to rewrite the recipe and it reduced the time and effort to mix, knead, and get through the first rising. I now make this more often and especially at Christmastime for all the families' Christmas morning breakfasts. I love making this Swedish coffee bread - probably because it brings back so many memories. Debbie, Carol, and Julie, have learned to make this and I trust the others will also. Pearl sugar can be bought at IKEA or the Swedish store in Norwalk, CT.
