2 large slabs of pork ribs, sage onion stuffing or stuffing of your choice, salt and pepper.
1 large roasting pan with lid.
Directions:
Directions:
Place one of the slabs of ribs in the bottom of the roasting pan, making sure that the bones are curving up at the sides. Spoon the stuffing onto the ribs, spreading it out to cover most of the meat.
Place the other slab of ribs on top, bone curving in the opposite direction of the bottom ribs. Be sure to salt and pepper the ribs as you construct the "turkey" If you like, the layers can be held together while baking by tying a string around it at several points (must lay the strings across the roasting pan at the beginning) Roast,covered with lid, in a slow oven--325 deg. until tender and browned. You may need to add water during the baking, so check the pan occasionally.

When we were growing up, this was our traditional Thanksgiving dinner. Our dad did not care for poultry at all. So this "turkey" was what we all looked forward to on the Holiday. Some of the stuffing would adhere to the sides of the roaster as it baked, and the three of us girls would vie for this delicious, crunchy treat. And none of us ever missed having a "real turkey"
