1/2# sausage links, sliced 1/4" long
1 can (15 oz) meatless chili
1 c Mexican cheese, shredded
2 T unsalted butter
2 eggs, beaten
1/4 c chives, chopped (optional)
sour cream

Directions:
Directions:
Brown sausage in a skillet, add chili and heat thru. Add 1/2 of cheese.
In a separate skillet, melt butter and add eggs and 1/2 of chives. Once eggs form a solid circle, add chili mixture, reserve 1/4 cup. Add a layer of cheese, reserve 1/4 cup. Fold omelet and add cheese and chili on top. Slide omelet onto a plate and garnish with sour cream and chilies.
