4 Mahi Mahi fillets, 1" thick
Sea salt and pepper to taste
1/2 c flour
2 eggs and 1/4 c milk, beaten
2 c panko (or bread) crumbs
2 lemons
4 T unsalted butter
1-1/2 T capers, drained
2 T fresh Italian parsley, chopped
4 T olive oil or canola oil
1 10 oz bag of spinach, cooked

Directions:

Season fish. Dredge in flour, then in the egg mixture and then in the panko. Pat down panko and store fillets in refrigerator until ready to cook. Peel lemons and extract juice into a sauce pan. Add butter and heat over med-low, stirring until butter melts. Add lemon pulp, capers and parsley. Set aside and keep warm.
Heat oil in a large heavy skillet. Add one layer of fish and cook until brown (2-4 minutes). Turn over and repeat. Do not overcook. Place filets in an oven proof disk and bake at 350ºF for 4-6 minutes.
Place spinach and fish on a platter and drizzle with lemon sauce. Serve,
