1/2 Box Fillo Dough
1 c Melted Butter
1 lb Portabella Mushrooms
1 t soy sauce
1/2 t sugar
1 tsp herbs de provence

Preheat oven to 375
Clean and chop mushrooms. Saute in small amount of oil or butter & season with soy sauce, sugar & herbs. Let cool.

Remove dough from package & cover with plastic wrap then a damp towel. It is important to keep dough covered while working with it because it will dry and become brittle very quickly.

Remove one sheet of dough & lay on a flat work surface. Brush the entire surface of the sheet with melted butter. Remove another sheet, lay ontop of the first one and brush with butter. Remove another sheet and brush with butter, for a total of three sheets.

Place a small amount of filling along one of the long edges of the dough and roll it into a long cigarette like roll. Place roll on a sheet pan & bake till well browned about 10 to 15 minutes.

Let roll cool for 5 minutes. Trim ends from roll to square them up. Cut roll into four equal pieces, cut each piece in half at a 45º angle, stand pieces up on edge to serve.
