5 - 6 cups canned red beans
small onion
1/2 green pepper
2 small tomatoes
2 garlic cloves
handful of cilantro
1 egg for each person
2 green bananas
3 buillon cubes
2 T. vegetable oil
sour cream

Directions:
Directions:
Put onion, tomatoes, cilantro, garlic, chile, 3 buillon cubes in blender. Blend together and add water if needed. In large pot add oil and blended vegetables. Cook 5 minutes. Put beans in blender and blend with water from the cans. Add blended beans to pot and cook. Cut green bananas into discs and brush with lime juice. Fry bananas in pan with vegetable oil then place on paper towels and sprinkle with salt. Add fried bananas to soup. Crack eggs right into soup. Bring to boil and then simmer for 20 minutes. Serve with tortillas, avocado and sour cream.

I got this recipe from a friend when I was teaching in Honduras. The fried bananas take extra time and the soup can be made without them.
