1/2 c beef fat with juice, butter or oil - any combination
6 eggs
1-1/2 c flour
1 t sea salt
1 T fresh thyme, chopped
1 T fresh rosemary, chopped
1 t fresh black pepper, ground
2 c milk
2 c heavy cream
4 oz goat (or any strong aromatic) cheese, cut into 20 pieces

Directions:

Preheat oven 400ºF.
Brush wells of 20 muffin tins with melted fat and place in oven.
Combine eggs, flour, salt and spices in blender until well mixed. Scrape sides. Start blender and slowly add cream until well mixed.
Remove tins from oven, fill each well half way, place a piece of cheese in each well and fill wells to 2/3-3/4 full.
Bake popovers 20-25 minutes until puffed and golden. Serve immediately.
