2 1/2 C dried red kidney beans, 9 c. water, 1 large bay leaf, 2-3 T soy sauce, 1 large onion chopped, 1 large clove garlic, minced, 1 stalk celery, chopped, 1/4 t. tumeric, 1/2 t ground coriander, 3T oil, 2 to 4 C cooked brown rice.

Rinse beans. Pour into water. Bring to boil; reduce heat to simmer. Add bay leaf and soy sauce. Saute vegetables and spices in oil until onions are soft. Add to beans. Simmer for about 2 1/2 hours until beans are creamy. serve over rice. This is the vegetarian version. My version is to add 1 lb of Jones bulk Sausage or Jimmy Dean orginal bulk. After adding the vegtetables cook the sausage in same frying pan and add the sausage when the rest is all done. I also sprinkle Kraft Parmesan/Remano grated cheese on top before serving. Easy to make and is very good
