6 russet potatoes 1 lb. bacon
1 green pepper 1 onion
1 lb. cheese

Directions:
Directions:
Cut the bacon into small pieces, brown in Dutch oven. Make sure bacon is crispy then add sliced potatoes, sliced green pepper, and sliced onions. Cook over medium flame for approximately 30 minutes stirring every 5 minutes. Take off heat and cover with shredded cheese. Allow to sit while cheese melts.

You can shred, cube, slice or cut the potatoes any other way you want. Red peppers and jalapeņo peppers add great flavor.
