1oz Lard or Butter
2oz Chopped Walnuts
3oz Castor Sugar
2 large bananas mashed
1/4 pt milk
7 oz self-raising flour
Butter and flour to grease baking tin

Directions:
Directions:
1. Set oven to gas mark 4/5 or 180ºC.
2. Rub the lard or butter into the self-raising flour.
3. Add the walnuts, castor sugar, bananas and milk to mix and stir gently.
4. Grease and flour 1 lb loaf tin and turn in mixture.
5. Bake in oven 1 - 1 1/4 hours in middle shelf.
6. Take out of oven and remove from tin when cooled.
7. Store in plastic bag. Loaf improves with keeping.

Louise says: "I came across this recipe when I moved into Birnam Guest House. Adrian's mum kept all her favourite recipes on a sheet of card (which is falling apart) and this is one of Adrian's and my favourite cake recipes. It is large enough to feed 5-7 people but doesn't get past 2 in our household!
