2 small to medium Eggplant
2 tbsp Lemon Juice
¼ c. Tahini
⅓ c. extra-virgin Olive Oil, + more for brushing and garnish
1 tsp Celtic Salt
¼ tsp Cumin
¼ tsp Smoked Paprika
1 tbsp Parsley

Directions:
Preheat oven to 450º, line baking sheet with parchment paper. Cut eggplant in half lengthwise, brush eggplant with olive oil on cut side. Place on parchment paper halved sides down.

Bake 35-40 minutes, until interior is very tender. Set eggplant aside to cool.

When cool enough, scoop out flesh, leaving skin behind. You want to remove some moisture from the eggplant, so set flesh in strainer over a bowl. Discard the drippings.

Place cooled and drained eggplant flesh and all the other ingredients into blender. Blend until smooth.

Pour into a container and drizzle with olive oil. Then garnish with smoked paprika and parsley. Refrigerate (It will thicken in the refrigerator).

Serve with crackers, pretzels or veggies.
