2 lb skinless chicken breasts (can be frozen)
2 (14½ oz) cans diced tomatoes with green chilies
1 (15 oz) can low-sodium tomato sauce
Pepper, to taste
1 pkg mild or hot chili seasoning mix
2 (15½ oz) cans rinsed hominy

Sour cream and shredded cheese, for serving

Directions:
Directions:
Place chicken in 3½-4-quart slow cooker. Mix tomatoes with green chilies, tomato sauce, pepper, and seasoning; pour over chicken. Cover and cook on low heat setting for 7-9 hours. Stir to break up chicken. Stir in hominy. Cover and cook on low heat setting 15 minutes or until heated through. Serve chili with sour cream and/or shredded cheese.

Personal Notes:
Can substitute tomatoes with green chilies by mixing together 6 fresh tomatoes (chopped), 1 fresh jalapeno pepper (chopped), and 1 fresh Anaheim pepper (chopped).

Can substitute chili seasoning by mixing together ½ Tbsp chili pepper, ½ Tbsp flour, 1 tsp onion powder, 1 Tbsp sugar, crushed garlic, ½ Tbsp paprika, and ½ Tbsp cumin.

Can substitute one of the cans of hominy with 1 can black beans.
