Topping:
2 c cornflakes, crushed
1 Tbsp butter, melted

Filling:
6 Tbsp butter
½ c onion, chopped
1 tsp salt
1½ c milk
3 Tbsp flour
⅛ tsp pepper
1 c Velveeta, cubed or American cheese, grated
1 Tbsp dried parsley, chopped
4 c carrots, sliced and precooked

Directions:
Directions:
Combine topping ingredients and set aside.

Sauté butter and onion until golden. Add 3 more Tbsp butter, salt, milk, flour and pepper; cook until thick. Add cheese, parsley and precooked carrots. Place carrot mixture in greased 9x13" pan. Sprinkle with topping mixture on top. Bake at 350º for 20 minutes.
