1 medium uncooked onion
1 tablespoon olive oil
29 oz reduced-sodium chicken broth
3 large uncooked Yukon gold potatoes
1 can yellow and white corn
1 cup 2% Milk, divided
½ tsp table salt
½ tsp black pepper
⅓ cup white all-purpose flour
¼ cup fresh parsley, minced, optional
2 cans chicken

Directions:
Directions:
In a large saucepan, cook and stir onions in oil over medium heat until tender. Add broth and potatoes; bring to boil. Reduce heat, cover and simmer for 10-15 minutes, or until potatoes are tender. Stir in corn, 1/2 cup milk, chicken, salt and pepper.

In a small bowl, whisk together flour and remaining milk until smooth. Stir into soup; return to boil. Cook and stir 2-3 minutes or until thickened. Sprinkle with parsley, if desired.
