Ingredients:

Ground meat (roughly ½ pound per burger, I prefer sirloin or chuck for this recipe)

Garlic (1 clove per burger depending on how much you like garlic)

Bacon (1-1½ long strips per burger)

Cheese (either shredded or sliced, use your favorite kind)

Salt (kosher) and Pepper

Bun (I recommend sesame seed buns)

Toppings (all optional, the burger alone is tasty enough)

Red onion

Tomato

Pickles

Fried egg (if you’re into that sort of thing)

Mustard (I recommend horseradish mustard)

Ketchup

Preparation:

1) Remove the ends of the garlic and finely chop it, you want to make sure that the pieces are roughly the same size so they cook evenly. Put the garlic in a small frying pan (on medium high heat) and add just enough butter so that none of your pieces of garlic are dry when the butter is melted. Add a bit of salt and pepper. Chop the bacon so that it is a bit larger than the pieces of garlic and toss it in the pan as well. Cook until the bacon is fully cooked. Remove from burner and set aside

2) Take a small handful of the ground beef (a little over ¼ pound) and form a kind of bowl, you’ll want a flat bottom, but an edge that can stand up on its own, the edge should be high enough to contain all of the fillings you want to add. This is the bottom of the burger.

3) Now that the garlic & bacon mixture has cooled, mix the cheese in with it. This will make sure that you have an even ratio for each burger.

4) Using a spoon, add the garlic/ cheese/ bacon mixture to the bottom piece of the burger, smooth it out so it’s not just in a ball, you want every bite to have the filling, not just the center.

5) To make the top of the burger take a small handful (this time a little less than ¼ pound) and flatten it into a disc like shape, check for size by laying it over the bottom section of the burger. The proper sized top will reach the perimeter of the burger. When it does, lay the top on the rest and seal it. Apply some (not much) pressure to get the air out of the burger, then press all of the sides together, none of the filling should be visible at this point.

6)Sprinkle salt and pepper on both sides of the burger and let it rest for ~7-10 minutes.
7) When you are ready to cook the burger, place a frying pan over medium high heat and put the patty in the pan, you won’t get much if any grease popping at first but watch out for it when you get to the second patty, it hurts! Cook on the first side for about 4 minutes, then flip and repeat. Every stove is different so you may need to increase or decrease the heat and length of time. DO NOT PUSH DOWN ON THE PATTY! This is something you always see in movies and on TV, but this is one of the worst things you can do to a burger (or steak!) it won’t help the cooking, it will push out all of the juices (yes, juices . . . greasy, fatty, delicious juices) and dry out your burger.

8) Let the burger stand for about 3 minutes, it’s not easy, but a mouthful of melted cheese can seriously damage your mouth. Plate it up and enjoy!
