8 center cut think (1½") pork chops
1 C onion (finely chopped)
¼ C green onion (chopped)
2 Tbsp minced fresh garlic
¼ C fresh parsley (chopped)
24 fresh raw oysters (chopped)
1 Tbsp Cajun seasoning
dash of Tabasco
1 C bread crumbs
1 C water (OR chicken broth)

Directions:
Directions:
Slit pork chops to make pocket for stuffing

Preheat oven to 350ºF

Stuffing:
Sauté onion, garlic, parsley and green onions until softened
Stir oysters into mixture and cook on medium-low about 10 minutes
Add Cajun seasoning and Tabasco; stir in bread crumbs (if too wet for stuffing, add more bread crumbs
Cool

Stuff pork chops and place in baking dish; add water (or chicken broth) to bottom of pan; cover and bake 40 minutes
Uncover and brown for 10 minutes
