Ingredients: ¼ c. butter or margarine
2/3 c. brown sugar (firmly packed)
5 pineapple slices, drained and halved
9 maraschino cherries
1 c. sugar
½ t. salt
½ c. shortening
2 eggs 1 t. vanilla extract
2 c. sifted cake flour
1½ t. baking powder
½ c. milk

Directions: 1. Heat oven to 350 .
2. Melt butter or margarine in 9x9x2" cake plan; brush over sides. Add brown sugar. Stir mixture over low heat until blended; remove from heat. Arrange half slices of pineapple in pinwheel pattern on sugar mixture; place maraschino cherries in center of each half slice and one in the middle of pan.
3. Cream sugar, salt and shortening thoroughly in large mixing bowl. Beat eggs into creamed mixture one at a time until light and fluffy. Add milk alternately to creamed mixture, blending well after each addition. Pour batter over pineapple. Bake for 1 hour or until done. Turn out on serving plate immediately. Serves 8.
